Pad Thai is a popular Thai stir-fried noodle dish that's both delicious and relatively simple to make. Here's a basic recipe to get you started:
Ingredients:
8 oz (250g) dried rice noodles
2 tablespoons vegetable oil
1 garlic clove, minced
4 oz (120g) firm tofu, cubed
2 eggs, lightly beaten
1 cup bean sprouts
3 green onions, chopped
2 tablespoons chopped peanuts
Lime wedges, for serving
For the sauce:
3 tablespoons tamarind paste
2 tablespoons fish sauce
2 tablespoons soy sauce
1 tablespoon sugar
1/2 teaspoon chili powder (optional)
Instructions:
1. Prepare the noodles: Soak the rice noodles in warm water for about 30 minutes, or until they are soft but still firm to the touch. Drain and set aside.
2. Make the sauce: In a small bowl, mix together the tamarind paste, fish sauce, soy sauce, sugar, and chili powder (if using). Set aside.
3. Cook the tofu: Heat 1 tablespoon of vegetable oil in a large pan over medium-high heat. Add the minced garlic and cubed tofu. Cook for about 5 minutes, or until the tofu is golden brown. Remove from the pan and set aside.
4. Cook the eggs: In the same pan, add the beaten eggs. Scramble until fully cooked, then remove from the pan and set aside with the tofu.
5. Stir-fry the noodles: Add the remaining tablespoon of vegetable oil to the pan. Add the drained noodles and the prepared sauce. Stir-fry for about 2-3 minutes, or until the noodles are well coated in the sauce.
6. Combine everything: Add the cooked tofu, eggs, bean sprouts, and green onions to the pan with the noodles. Toss everything together and cook for another minute, or until heated through.
7. Serve: Remove from heat and sprinkle with chopped peanuts. Serve hot with lime wedges on the side.
